Question: Painting with food colouring - cake decorating?

When cake decorating and painting directly onto icing with diluted food colouring paste.. what do i dilute it with? water (although i heard that this may start to dissolve sugar in icing?), lemon juice, alcohol?

The bakery I work at used vodka since it evaporates quickly and the color drys fast. I always wondered why the decorators had a bottle of vodka amongst the decoration supplies so I asked...

Might be easier to use the liquid food colouring, then just use it like watercolour paint, with tiny brush.

You can use water, but not too much.

Neutral alcohol is the usual method. This means grain spirits (everclear, gem clear) or vodka. Powdered food colouring is best, as it's not diluted by other ingredients and contains no water that might cause dissolution of sugars.
